Rachel Allen’s Classic Chocolate Cake w/ Chocolate Ganache
A fool proof chocolate cake recipe for those days when you crave a simple dessert…
dark chocolate ganache
Preheat your oven at 180 degrees C.
Sift together the flour, baking powder and cocoa and set aside.
Cut the chocolate into rough pieces (skip this if using chocolate chips) and place over a water bath to melt along with the milk.
Keep watching it as you proceed so as to not over-melt it!
In the bowl in which you will make the entire mixture, cream the sugar with the butter till white and fluffy. Add the eggs one at a time and continue to beat.
Your chocolate should have been done by now. Keep it to cool.
Once its cool, mix it in with the egg, butter, sugar mixture till well incorporated.
Finally, add the sifted flour mix a little at a time and fold in to incorporate well.
Bake in the oven at 180 degrees C for 25 minutes till the knife comes out clean.
Rest the cake till it is cool and then frost with the chocolate ganache topped with any roasted nuts. I used almonds.
