A simple potato, garlic, chilli stir fry for those nights when cooking something elaborate is just too much trouble
washed, scrubbed and cut into french fries
peeled and crushed coarsely
you can use coconut oil as well
In a wok or kadhai, put in the oil. Once its hot, put in the mustard seeds and let them splutter. Then add the cumin and toast for a bit.
Once the cumin is toasty, put in the crushed garlic and saute on a medium flame till the garlic is golden.
Then add the chilli powder and mix quickly before adding in the potatoes and salt.
Stir well and cover for about 10-15 minutes till the potatoes are cooked through.
Remove the lid in the last 5 minutes before the dish is done.
Serve hot with rice and dal or even chapatti.
