Who doesn’t like chocolate? Anyone who doesn’t, please pardon my being judgmental, but you just don’t know what you are missing! I LOVE chocolate, which is obvious from the above statement! And, the classic chocolate cake by Rachel Allen is my favourite version. This is what I call a full proof recipe, which always turns out just perfect.

So, this Sunday, I got into the baking mood and with the appropriate ingredients in my kitchen, nothing could stop me! I started off with making this absolutely delicious and heart warming chocolate cake with chocolate ganache.

Instructions
  1. Preheat your oven at 180 degrees C.
  2. Sift together the flour, baking powder and cocoa and set aside.
  3. Cut the chocolate into rough pieces (skip this if using chocolate chips) and place over a water bath to melt along with the milk.
  4. Keep watching it as you proceed so as to not over-melt it!
  5. In the bowl in which you will make the entire mixture, cream the sugar with the butter till white and fluffy. Add the eggs one at a time and continue to beat.
  6. Your chocolate should have been done by now. Keep it to cool.
  7. Once its cool, mix it in with the egg, butter, sugar mixture till well incorporated.
  8. Finally, add the sifted flour mix a little at a time and fold in to incorporate well.
  9. Bake in the oven at 180 degrees C for 25 minutes till the knife comes out clean.
  10. Rest the cake till it is cool and then frost with the chocolate ganache topped with any roasted nuts. I used almonds.

    you know i had this recipe since soo long..inspite of it being so simple i never tried it.. should do so soon.. i like the look of the dark chocolate in between!! is tht how the cake turns out or u spread some ganache there??

    Fatty, it’s one of the recipes I always use, even pragya has made it a dozen times 🙂 And, although every other time the cake has turned out fluffy, this time, it was a little dense and that is the dark chocolate in between looking darker than usual. No ganache 😀
