Cream of Spinach Soup

It’s been quite some time since I posted a new recipe here. Work’s just been doing the usual thing and taking over my life. Plus with the million weddings (it sure feels like that) I haven’t been able to do much. But sometime last week, I did get time to make something light and fresh for the hubby and me.

When I used to stay with my friend and roommate Pragya, we were always devising plans to lose weight. But not one worked, only due to our sheer laziness (me more than her). This particular instance that I’m going to speak about did work for a week tops! We decided that we would have soup and salad everyday for dinner and go for walks in the morning. To do this, I started researching various kinds of easy vegetable soups to make and salad dressings. One of our favourite ones was Palak Soup. It was refreshing, tasty and very healthy. So, today, I present you with my Cream of Spinach Soup.

Instructions
  1. Boil the spinach leaves, half the onion, the whole garam masala and garlic in water till withered and the veggies go soft.
  2. Remove the whole garam masalas. Drain and retain the water.
  3. Grind the solids to a fine paste, using the retained water for consistency.
  4. Chop the other half of the onion and fry in the oil till golden brown.
  5. Add the spinach paste and fry well.
  6. Now add some of the retained water till you get the required consistency.
  7. Put in the salt and boil the soup till slightly thick (I donu2019t like watery soups).
  8. Add the cream and swirl it around till the soup changes slight colour.

    i made this soup along with the Pizza and it turned out to be very nice and all my friends loved it!!!!! though i dint fry the onion after, rest of the recipe was replicated as is……. i dint make the coleslaw salad though, instead of that i made hara bhara kabab. but thanks to u my interest in making food is growing marginally rather than just eating food!!!!

    Yummiest soup ever….simple to make n rich in taste !! I am not a spinach lover but had lot of spinach…n utilized it in yummiest possible way 🙂 Must try !!

    Easiest to make, still rich in taste..I am not such a spinach lover…had some spinach at home…it got utilized in yummiest way 🙂 must try.. I wanted it little thicker…but ran out of corn starch…wud love to knw solutions if anyone can suggest…but yes, it really tasted perfect !!
