Chocolate Mousse

I have a sweet tooth and inevitably, chocolate is my favourite flavour! Recently, I was watching Masterchef Australia Season 2 and was so fascinated by the Masterclass on how to make chocolate that I just had to make something chocolatey. So, I quickly did a Google search for a chocolate mousse that would require simple ingredients and set the same day. And voila, I came across the simplest possible recipe by Donna Hay.

Overnight chocolate mousse for the soul

Passive Time 4 hours
  1. Melt the chocolate and butter over the double boiler till glossy. Ensure that you control the temperature of the chocolate, otherwise you'll get a gluggy mix (you can do this by taking the bowl off the boiler whenever you think that its getting too hot).
  2. In another bowl, whisk together the three yolks and fold into the chocolate-butter mix vigorously, or else you'll get scrambled egg.
  3. In yet another bowl, whisk together the whites till they form soft peaks.
  4. Then, add in the caster sugar and whisk on high speed till you get stiff peaks.
  5. Finally, fold the whites into the chocolate mix and then add the cream.
  6. Pour into serving bowls and chill till set.
  7. For a garnish, you could add some berries, whipped cream or just chocolate shavings like I did.
