Caramelised Bananas in an Orange Syrup

Caramel is such a beautiful flavour – hints of bitterness in the sweetness of the sugar make it just delicious – and not to forget the gorgeous colour and the alchemy involved in making a caramel!

I have always been fascinated with the making of caramel, but I never really tried it. The first time I did, it burned, and I, quite typically, refrained from trying it ever again. However, one day, I just felt like making caramelised bananas. I didn’t know how I was going to do it, so I surfed the net till I got the simplest recipe there could be. And I just couldn’t wait to try it – although it took me almost 2 months to do so.

  1. In a heavy bottom pan, melt the butter and add the sugar and bananas, cut side down on a medium flame.
  2. Once the sugar starts to caramelise, deglaze the pan with freshly squeezed orange juice and a pinch of cinnamon (you can be a little heavy handed with the spice, if you like).
  3. After 10 seconds of the orange juice being poured into the pan, turn the bananas over, all the while basting with the juice.
  4. Let it rest for 10 seconds more till the syrup is a little dense, and serve.
  5. A beautiful accompaniment would be some fresh cream or vanilla ice cream on the side. The perfect end to a meal! If some of the syrup remains, reserve it and pour over plain icecream. It is delicious!

    I love bananas but i have never seen nor have i thot of banana in such a beautiful & tempting version…i loved the caramelised banana..infact i savoured d extra caramel for a couple of days n used to have little of it after every meal to re-live the yummmmmy taste…;)
