Balsamic Tomato and Celery Salad

  1. Cut the tomatoes into large wedges (or cubes, if thatu2019s what you prefer) and keep aside in the serving bowl.
  2. Chop the celery fine and mix it with the tomatoes.
  3. Then, in a smaller bowl, mix together the vinegar, EVOO, honey and salt and stir well till it emulsifies.
  4. Dress the salad with this just before serving cold.
